Spicy Prawns |

3 servings of protein per day is recommended for pregnancy. Prawns are an excellent and tasty way of meeting this daily requirement.

Serves: 6 people |
 |
 |
1 kg fresh prawns (devein and shell) |
 |
1 small onion (chopped) |
 |
3 cloves garlic |
 |
2 tablespoons fresh lime juice |
 |
1 teaspoon black pepper |
 |
1 teaspoon brown sugar |
 |
1 teaspoon olive oil |
 |
2 teaspoons light soya sauce |
 |
1 teaspoon cornstarch |
 |
1 teaspoon chopped fresh coriander |
 |
1 extra teaspoon oil for stir frying |

Soak prawns with garlic, onions, lime juice, brown sugar, oil and black pepper. |

Place in fridge for at least 1 hour. |

Strain prawns from marinade. |

Heat oil in a non-stick frying pan. Stir fry onion and garlic. |
| 5. |
Add drained prawn mixture and continue frying for abou 2 minutes until browned. |

Transfer prawns into a dish. |
| 7. |
Mix cornflour with half the remaining marinade, cook until thickened. |
| 8. |
Place prawns back into sauce. |
| 9. |
Sprinkle coriander leaves and cook for a further 5 minutes. |
| 10. |
Serve with rice. |
