Dietary fibre is necessary to combat constipation, a common discomfort of pregnancy caused by low fibre diet and hormonal changes. Fibre is the part of plants that our body cannot digest. The soup contains a high content of fibre which is definitely beneficial for pregnant mums.
Serves: 6 people
800 g pumpkin (peeled and chopped)
2 tins crushed tomatoes (440 g cans)
400 ml water
1 onion (diced)
3 cloves garlic (crushed)
1 tablespoon olive oil
1 cup fresh chopped basil
1 teaspoon ground black pepper
400 ml coconut cream

Heat olive oil in a non-stick pan.

Brown onion and garlic in oil.

Add pumpkin and brown all over.
4.
Add tomatoes, basil, pepper and water and bring to boil.
5.
Simmer covered for 20 minutes until pumpkin is soft.
6.
Add coconut cream and blend. Serve hot with crusty bread rolls.
