This dish is quick and easy to prepare. It is best served with rice and another vegetable dish, if preferred.
Serves: 4 people
500 g large tiger prawns, peeled and deveined, tails intact
120 g snow peas, topped and tailed
1 teaspoon minced garlic
1/2 teaspoon crushed black pepper
2 tablespoons chopped coriander leaves
2 tablespoons chilli oil
1/2 teaspoon sugar
pinch of salt

Preheat wok, then add chilli oil. Sauté garlic, black pepper and coriander leaves in chilli oil for about 2 minutes.

Add in the prawns and stir fry on high heat for about 4 to 5 minutes. Add the snow peas to the prawns and continue stir frying for about 3 minutes or until snow peas is cooked but still crisp.

Serve hot garnish with extra chopped coriander leaves.
