Stir-fried Prawns & Snow Peas in Chilli Oil |

This dish is quick and easy to prepare. It is best served with rice and another vegetable dish, if preferred.

Serves: 4 people |

500 g large tiger prawns, peeled and deveined, tails intact |
 |
120 g snow peas, topped and tailed |
 |
1 teaspoon minced garlic |
 |
1/2 teaspoon crushed black pepper |
 |
2 tablespoons chopped coriander leaves |
 |
2 tablespoons chilli oil |
 |
1/2 teaspoon sugar |
 |
pinch of salt |

Preheat wok, then add chilli oil. Sauté garlic, black pepper and coriander leaves in chilli oil for about 2 minutes. |

Add in the prawns and stir fry on high heat for about 4 to 5 minutes. Add the snow peas to the prawns and continue stir frying for about 3 minutes or until snow peas is cooked but still crisp. |

Serve hot garnish with extra chopped coriander leaves. |
