Pregnancy Confinement Family Weaning Kids Suggest a Recipe
Stir Fried Vegetables with Pine Nuts
 
Vegetables are an excellent source of folic acid. A folic acid deficiency results in anaemia and a greater risk of develop-mental problems in your baby. So don't forget to include it in your diet!
Serves: 6 people

1 carrot (sliced)
200 g broccoli (cut into flowerettes)
6 baby corns
1 red capsicum (sliced)
1 green capsicum (sliced)
4 stalks celery (stringed and sliced)
200 g snow peas (stringed)
150 g bean sprouts (cleaned)
2 tablespoons coriander leaves (chopped)
1 medium size onion (finely chopped)
3 cloves garlic (crushed)
1 tablespoon canola oil
1/2 teaspoon ground black pepper
1 tablespoon light soy sauce
1 teaspoon cornflour
1 vegetable stock cube
(dissolved in 1/4 cup water)
3 tablespoons roasted pinenuts

1. Heat oil in a non-stick wok.
2. Fry garlic and onions until browned.
3. Stir fry carrots and baby corn for 1 minute.
4. Add celery, green and red capsicum, snow peas and broccoli.
5. Add bean sprouts and coriander leaves. Stir fry.
6. Add light soy sauce, black pepper, cornflour mixed in vegetable stock cube and water.
7. Bring mixture to boil and turn off heat.
8. Sprinkle with roasted pine nuts.
9. Serve with rice.
