Crunchy Chicken Salad |

This crunchy combination adds punch to your diet. Served cold, it is light, nutritious and can be made in a jiffy!

Serves: 3 people |
 |
| For salad |
 |
6 pieces cooked skinless chicken breast (cut into strips) |
 |
3 sticks celery (sliced) |
 |
2 granny smith apples (cored and diced) |
 |
80 g walnut (chopped roughly) |
 |
2 tablespoons spring onions (chopped) |
For dressing |
 |
200 ml mayonnaise |
 |
1 tablespoon sesame oil |
 |
1/2 teaspoon crushed black pepper |
 |
1 teaspoon lemon juice |
 |
pinch of salt to taste |

Place all ingredients for salad in a large bowl. |

In a separate bowl, whisk mayonnaise, sesame oil and lemon juice together until smooth. |

Pour dressing over the ingredients, sprinkle black pepper and salt. |

Toss well and refrigerate before serving. |

Serve salad in a bowl lined with lettuce leaves. |
