Chicken & Mango Salad |

In a hot climate like Singapore, hot food can sometimes be unappetising. Try this delicious cold mango and chicken salad with a curried mayonnaise to add a new twist to your diet.

| For salad |
 |
1 kg cooked chicken fillets |
 |
1/2 cup shredded coconut |
 |
1 mango (peeled and chopped) |
 |
4 spring onions |
For mayonnaise |
 |
1 teaspoon curry powder |
 |
1/4 teaspoon five spice powder |
 |
1 clove garlic |
 |
1 teaspoon fresh ginger (grated) |
 |
3/4 cup low fat mayonnaise |
 |
1/4 cup coconut milk |

Toast coconut in an oven at 180°C oven or 5 minutes. |

Cut chicken and mango into bite size pieces. |

Mix chicken, coconut and spring onions. |

Combine all mayonnaise ingredients. |

Mix mayonnaise, chicken and mango together. |
| 6. |
Refrigerate for at least 1 hour before serving. |
