Serves: 4 people
1 1/2 kg sea bass (cleaned)
80 g unsalted butter / margarine
3 tablespoons fresh / dried dillweed
70 ml dry white wine or fish stock
finely grated rind & juice of 1 lemon
sea salt & freshly ground black pepper
lemon slices & dill sprigs, to garnish

Cut a sheet of foil large enough to enclose the fish. Place the fish in the centre of the foil.

Stuff butter and dillweed mixture into fish belly. Marinate fish with salt and pepper.

Then, slowly pour over the wine and lemon juice.

Fold the foil to form a loose package so that the wine and juices do not leak out. Place the foil package on the barbecue and grill for about 45 minutes.
5.
Serve immediately in the foil, garnished with a few lemon slices and fresh dill sprigs.
