Barbecued Sea Bass |

Serves: 4 people |

 |
1 1/2 kg sea bass (cleaned) |
 |
80 g unsalted butter / margarine |
 |
3 tablespoons fresh / dried dillweed |
 |
70 ml dry white wine or fish stock |
 |
finely grated rind & juice of 1 lemon |
 |
sea salt & freshly ground black pepper |
 |
lemon slices & dill sprigs, to garnish |

Cut a sheet of foil large enough to enclose the fish. Place the fish in the centre of the foil. |

Stuff butter and dillweed mixture into fish belly. Marinate fish with salt and pepper. |

Then, slowly pour over the wine and lemon juice. |
| 4. |
Fold the foil to form a loose package so that the wine and juices do not leak out. Place the foil package on the barbecue and grill for about 45 minutes. |

Serve immediately in the foil, garnished with a few lemon slices and fresh dill sprigs. |
