Apricot Loaf |

This apricot loaf is a great source of fibre and a tasty and filling snack. Great for those times when you need to snack on something nutritious.

Serves: 6 people |

 |
3/4 cup dried apricots (chopped & soaked in 1 cup water for 1 hour) |
 |
2 tablespoons melted margarine |
 |
1 cup sugar |
 |
2 cups self-raising flour |
 |
1 egg |
 |
1/2 cup orange juice |

Combine egg and sugar. |

Add butter and other ingredients including the apricot water. |

Pour into buttered loaf tin. |

Bake in moderate (180°C) oven for 30 to 40 minutes. |

Cool and serve. |
