Pregnancy Confinement Family Weaning Kids Suggest a Recipe
Apricot Loaf
 
This apricot loaf is a great source of fibre and a tasty and filling snack. Great for those times when you need to snack on something nutritious.
Serves: 6 people

3/4 cup dried apricots
(chopped & soaked in 1 cup water for 1 hour)
2 tablespoons melted margarine
1 cup sugar
2 cups self-raising flour
1 egg
1/2 cup orange juice

1. Combine egg and sugar.
2. Add butter and other ingredients including the apricot water.
3. Pour into buttered loaf tin.
4. Bake in moderate (180°C) oven for 30 to 40 minutes.
5. Cool and serve.
