Orange Rice Salad |

Citrus delights. This tangy fusion of ingredients will win the heart of any child.

Serves: 2 people |
 |
| For salad |
 |
4 cups cooked rice |
 |
100 g prawns or shrimps (cooked & peeled) |
 |
2 large firm oranges (peeled & diced) |
 |
1 ripe mango (peeled & diced) |
 |
1 small can mushrooms (sliced) |
 |
2 tablespoons margarine |
 |
fresh or canned pineapple (sliced) |
 |
salt and pepper to taste |
For dressing |
 |
1 small onion (diced) |
 |
1 clove garlic (optional) (chopped) |
 |
2 teaspoons brown sugar |
 |
2 tablespoons olive oil |
 |
2 tablespoons fresh lime or lemon juice |
 |
2 tablespoons tomato paste |
 |
salt and pepper to taste |

Add margarine to rice and mix well. |

Add prawns, mango, oranges, pineapple slices and mushrooms to the buttered rice. |

Add salt and pepper to taste. |

To serve, place in orange skin, topped with dressing. |
To Make Dressing |
| 1. |
Heat oil in a non-stick pan. Fry garlic. |
| 2. |
Add onion and allow to brown before adding tomato paste and brown sugar. |
| 3. |
Finally, pour in lime / lemon juice. |
| 4. |
Add salt and pepper to taste. |
