Pregnancy Confinement Family Weaning Kids Suggest a Recipe
Orange Rice Salad
 
Citrus delights. This tangy fusion of ingredients will win the heart of any child.
Serves: 2 people

For salad
4 cups cooked rice
100 g prawns or shrimps (cooked & peeled)
2 large firm oranges (peeled & diced)
1 ripe mango (peeled & diced)
1 small can mushrooms (sliced)
2 tablespoons margarine
fresh or canned pineapple (sliced)
salt and pepper to taste

For dressing
1 small onion (diced)
1 clove garlic (optional) (chopped)
2 teaspoons brown sugar
2 tablespoons olive oil
2 tablespoons fresh lime or lemon juice
2 tablespoons tomato paste
salt and pepper to taste

1. Add margarine to rice and mix well.
2. Add prawns, mango, oranges, pineapple slices and mushrooms to the buttered rice.
3. Add salt and pepper to taste.
4. To serve, place in orange skin, topped with dressing.

To Make Dressing
1. Heat oil in a non-stick pan. Fry garlic.
2. Add onion and allow to brown before adding tomato paste and brown sugar.
3. Finally, pour in lime / lemon juice.
4. Add salt and pepper to taste.
