Fruit Pancake |

Makes: 12 |

8 oz plain flour |
 |
1 1/4 cups milk |
 |
1 1/4 cups water |
 |
1 oz butter, melted |
 |
2 eggs |
 |
pinch sugar |
 |
pinch salt |
 |
pinch yeast |
For the filling |
 |
Any fruit preferably strawberries, bananas or apples |

Mix all the ingredients, except the egg whites, together for the batter. Let it stand for about 3 to 4 hours. |

Just before cooking the pancakes, cut the bananas into rings. |

Heat a little butter in a non-stick pan and pour a spatula of pancake mix in the middle to form a circle. Cook pancakes over low heat. |

Place bananas on top of semi-cooked pancakes and allow the pancake to cook. |

Serve warm with maple syrup if preferred. |

For a strawberry filling, put well-washed strawberries into a saucepan with enough water and cook. Stir regularly. |

Once, strawberry is tender, drain and chop. Prepare it with the pancake the same way as the bananas. |
