Vegetarian Fried Noodles |

There are a lot of vegetarian ingredients you can use in this recipe. Shredded cabbage or mock duck and chicken would lend good flavour. The plus factor of this dish is the high vegetable protein content, largely from the use of various soya bean based ingredients.

Serves: 4 people |
 |
 |
1 1/2 to 2 packets dried egg noodles (boiled and drained) |
 |
1 handful bean sprouts (cleaned and drained) |
 |
4 - 5 dried Chinese mushrooms OR |
 |
8 - 10 pieces canned straw mushrooms (sliced) |
 |
1/2 large carrot (cut into fine strips) |
 |
2 pieces flat dried soya bean (sliced finely and fried till crisp) |
 |
1 handful dried 'golden noodles' |
 |
1 - 2 tablespoons green peas |
 |
3 cloves garlic (finely chopped) |
 |
1 large onion (diced) |
 |
2 tablespoons vegetarian mushroom sauce |
 |
2 tablespoons soya bean oil |
 |
pepper to taste |

Heat 1 tablespoon oil and fry half the amount of garlic. Add carrots and mushrooms, frying well till cooked. |

Add 'golden noodles' and finally, bean sprouts. Season with vegetarian sauce and pepper. Turn off heat after about 1 minute and leave aside. |

Heat remaining tablespoon of oil and fry remainder of garlic. Add noodles, mixing well and frying for about 3 to 5 minutes. |

Add the cooked ingredients and sprinkle a little water over noodle mixture. After about 2 minutes, turn off heat and add green peas. |

Serve with a topping of omelette cut into fine strips (optional) and sprinkle the fried soya bean strips just before serving. |
