Stuffed Pita Pockets |

Pita is a good substitute for regular 'processed' bread which is often pure carbohydrate and little else in the way of vitamins. It is wheat based and when lightly toasted becomes crisp. It is a lighter alternative to rice or bread.

Serves: 4 to 6 people |
 |

4-6 pieces pita bread (slit on one side and pried open slightly) |
 |
200 g teriyaki beef (finely sliced) |
 |
3 tablespoons Yakiniku No Tare (Japanese barbecue sauce) |
 |
1 tablespoon regular barbecue sauce |
 |
1 tablespoon tomato ketchup |
 |
1/2 carrot (shredded) |
 |
2 teaspoons margarine |
 |
1 large white onion (diced) |
 |
4 - 6 lettuce leaves (washed) |
 |
pepper to taste |

Marinate beef strips in the 2 varieties of barbecue sauce and tomato ketchup. |

Heat margarine and add onions and carrots, frying until tender and fragrant. Add beef and stir fry lightly until beef is just cooked (avoid overcooking it will be tough). |

Season to taste with pepper. Turn off heat and leave aside to cool. |

When mixture is cool, divide into 4 or 6 portions. Place a lettuce leaf to line each pita pocket and carefully fill each pita bread pocket with the filling. |

Put pita pockets under a grill for just 5 minutes before serving to crisp the outside. Serve immediately. |
