This meal is perfect when you absolutely have no time (nor the energy) to bother with a regular 3-course dinner. Preparation should take less than half an hour. The rest is done by tossing everything into the pot or rice cooker.

Serves: 4 people |

6 - 8 chicken wings (mixed with 1 tablespoon dark soya sauce and 1 tablespoon light soya sauce) |

100 g lean pork (finely sliced) |
 |
1 1/2 dried Chinese sausage (sliced) |
 |
6 - 8 small dried Chinese mushrooms (washed and soaked) |
 |
1 piece salted fish (cut into small pieces and fried till crisp) |
 |
3 teaspoons dark soya sauce |
 |
2 teaspoons light soya sauce |
 |
1 large onion (diced) |
 |
4 slices ginger (cut into fine strips) |
 |
2 tablespoons soya bean oil |
 |
3 cups rice (washed and patted dry with paper towel) |
 |
dash of sesame oil |
 |
salt and pepper to taste |

Heat oil, add chicken and fry till lightly browned. Remove chicken. |

Using the same oil, add onions and ginger, fry till fragrant. Add rice and fry lightly for about 5 minutes. |

Add sufficient water to cook rice (as you regularly would). You may include the water from the soaked mushrooms, if preferred. Season rice with salt, pepper and 2 teaspoons of dark soya sauce. |

Add chicken wings, pork slices, Chinese sausage slices, mushrooms and half the amount of salted fish. Do not mix into the rice. Cover pot and simmer over low heat until rice is cooked. |

When ready to serve, mix rice with ingredients on top and serve with a few leaves of blanched kai lan or butter lettuce. Sprinkle remainder of salted fish over rice and serve hot. |
