Minced Beef in Mexican Sauce |

Although minced topside is generally more expensive than regular minced beef available at supermarket counters, it might be worth spending a bit more to ensure that the meat you consume is minced from lean meat. This helps keep the fat level down. Alternatively, select your own portion of lean beef and have your butcher mince it for you.

200 g minced beef |
 |
1 large white onion (finely diced) |
 |
4 cloves garlic (chopped) |
 |
1 can whole peeled tomatoes (use 3 and chop into large pieces) |

1/2 small green pepper (diced) |
 |
1/2 small red / orange pepper (diced) |
 |
1 small can tomato paste |
 |
1 cinnamon stick |
 |
3 tablespoons tomato ketchup |
 |
1 lime |
 |
2 teaspoons sugar |
 |
1 teaspoon olive / vegetable oil |
 |
salt / ground black pepper to taste |

large pinch coriander powder |

Mix tomato paste, ketchup and olive oil with 300 ml water. Mix well and leave aside. |

Heat margarine in a pan. Fry onions and garlic with cinnamon stick till fragrant. Add minced beef, season with salt and pepper. Sprinkle with coriander powder and stir fry till meat is cooked. |

Add chopped tomatoes and diced peppers. Then, pour in the prepared sauce. |

Squeeze lime juice and sprinkle a little sugar. Mix well, simmer a couple more minutes and turn off heat. |

Serve with slices of French loaf or garlic bread. |
