Stir Fried Pork with Apple & Dates |

Use lean pork, stripped of any fat. Leave apple skin on to retain vitamin content and use naturally dried dates which add sweetness to complement the lightly sour taste of the green apples.

Serves: 2 people |
 |
 |
150 g lean pork (finely sliced) |
 |
1 green apple (cored and cut into slices, keeping skin on) |
 |
1 red apple (cored and sliced, keeping skin on) |
 |
2 - 3 fresh dates (pitted and cut into strips) |
 |
2 cloves garlic (finely chopped) |
 |
1 medium white onion (cut into large wedges) |
 |
1 cinnamon stick and dash of cinnamon powder for seasoning |
 |
2 - 3 teaspoons gravy mix powder (a number of varieties available in supermarkets) |
 |
1 tablespoon soya bean oil |
 |
pinch of black pepper |
 |
salt to taste |

Sprinkle gravy mix powder over pork slices and leave for about 15 minutes. |

Heat oil in shallow pan and lightly fry garlic, onions, dates and cinnamon stick till fragrant. |

Add pork slices and stir fry till pork is lightly browned. |

Add apple slices, pepper and salt, mixing well. |
| 5. |
Sprinkle a little water over contents until they sizzle, leave another 2 to 3 minutes and turn off heat. |

Serve warm. |
